To make carrot yogurt you need to  mix the carrot, yogurt and salt in a bowl. Next, heat the oil and add the mustard seeds. Sprinkle the ricotta over it and cover it with cumin powder. Et voila! Ready to taste!

3. Carrot tartlets

Ingredients:

  • 2 cups of  wholemeal white flour
  • 2 cups of  brown sugar
  • Two teaspoons of  cinnamon
  • 2 teaspoons of  baking powder
  • Half a tablespoon of  salt
  • 2 cups of  grated carrots
  • eggs
  • Greek yogurt
  • 1/3 cup  of coconut oil
  • 1/4 cup of  milk

Method:

  1. In a large cup,  combine the flour, sugar, spices, baking powder and salt,  and mix for a few minutes.
  2. Add the carrots and coconut,  to mix and set aside. Note that you will need a separate bowl to mix the yogurt, eggs, coconut oil and milk.
